Ingredients

1 lb carrot
1 lb sugar
1 lemon , zest of
2/3 cup water
Lemon and Carrot Jam is a unique twist on traditional jams and preserves. The tangy and sweet flavor makes it a perfect addition to your breakfast table spread. This jam is also a great source of vitamins and fiber.

Instructions

1.Scrape and slice the carrots
2.In a large saucepan add the carrots in along with the sugar, lemon zest and water
3.Cook on medium heat, stir until sugar is dissolved
4.Boil for 25-30 mins stirring frequently until mixture thickens to a jammy consistency
5.Pour into sterilized jars and seal with lids
6.Jam is ready to use after 24 hours of cooling

CONS

High in sugar, may not be suitable for those with diabetes or trying to limit sugar intake
