3 1/2 cups flour
1 large egg
2 1/2 cups mozzarella cheese or 2 1/2 cups gruyere , shredded
1 1/2 cups crumbled creamy feta cheese
3/4 cup farmer 's cheese or 3/4 cup pot cheese
1/4 cup unsalted butter , softened
1 large egg , lightly beaten
1/4 teaspoon table salt
1/4 teaspoon ground white pepper ( optional )

Instructions

1.In a small bowl, dissolve yeast in warm water and honey.
2.In a large bowl, beat 1/2 cup butter and 1 1/2 teaspoons salt until creamy.
3.Add flour and yeast mixture, stirring until a dough forms.
4.Knead dough for 10 minutes, then let rise for 1 hour.
5.In a separate bowl, mix together mozzarella or gruyere, feta, and farmer's or pot cheese.
6.Preheat oven to 425F.
7.Divide dough into 4 portions.
8.On a floured surface, roll out each portion into a circle.
9.Spoon cheese mixture onto each circle, leaving an inch border.
10.Fold edges up and pinch corners to seal.
11.Brush with beaten egg, salt, and white pepper (optional).
12.Bake for 25 minutes or until golden brown.
13.Serve hot and enjoy!
