3/4 ounce dried wild mushrooms ( preferably porcini ( or more )
2 tablespoons butter

Instructions

1.In a large skillet, melt 3 tbsp butter over medium heat and add sliced onions. Cook until caramelized, about 20 minutes.
2.Meanwhile, in a large mixing bowl, mix together flour and salt. Add egg, water, and vegetable oil, and mix until dough forms. Knead on a floured surface for 5 minutes.
3.In a small bowl, pour boiling water over the dried mushrooms and let sit for 15 minutes. Drain and squeeze out excess liquid, then chop into small pieces.
4.In another skillet, melt 2 tbsp butter over medium heat and add finely chopped mushrooms, minced onion, and chopped dill. Cook until mushrooms are tender and most of the liquid has evaporated, about 10 minutes. Remove from heat and stir in egg yolk.
5.Roll out dough on a floured surface and cut into circles. Add a spoonful of mushroom mixture and a spoonful of caramelized onions to each circle, then fold over and pinch edges to seal.
6.Bring a large pot of salted water to a boil, then add perogies and cook until they float to the surface, about 3-5 minutes.
7.Serve hot with a dollop of sour cream on top.
