Ingredients

2 tablespoons olive oil
3 -4 beets
2 carrots
5 baby red potatoes
1 cup cabbage , shredded
1 medium onion , chopped
2 stalks celery , chopped
1 medium green chili pepper , chopped
3 garlic cloves , minced
12 ounces chunky spaghetti sauce
1 quart chicken broth
kosher salt
pepper
sour cream ( to garnish )
Borscht is a traditional soup from Eastern Europe, and this recipe from Renata is a classic version. It's made with beets, which give the soup its distinctive deep red color, as well as carrots and potatoes. The soup is seasoned with garlic and green chili pepper for an extra kick of flavor, and is finished with a dollop of sour cream. This hearty soup is perfect for cold winter days, and is a great way to get your daily dose of vegetables.

Instructions

1.Peel and grate beets, carrots, and potatoes.
2.In a large pot, heat olive oil. Add onion, celery, garlic, and green chili pepper. Cook until onion is translucent.
3.Add in the grated vegetables, cabbage, chicken broth, and spaghetti sauce.
4.Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 1 hour.
5.Serve with a dollop of sour cream.

PROS

Great source of vitamins and minerals, delicious and hearty soup to warm you up in colder months.

CONS

May not be appealing to those who don’t enjoy beets or sour cream.
