Ingredients

1 1/2 1 1/2 lbs portabella mushrooms or 1 1/2 lbs cremini mushrooms
4 tablespoons light olive oil
1 medium onion , chopped
3 garlic cloves
3 tablespoons mayonnaise
2 teaspoons fresh lemon juice
2 tablespoons chopped fresh dill ( optional )
salt & pepper
Wild mushroom caviar is a vegetarian spin on traditional caviar. Made with sautéed and chopped wild mushrooms, mayonnaise, and fresh dill, this spread is creamy and packed with earthy flavors. Serve it as an appetizer with crackers or crostini, or as a topping for a salad or sandwich. It's a great dish to serve at a party or gathering, and can be made in advance to save time.

Instructions

1.Clean and slice the mushrooms. Heat olive oil in a pan over medium heat
2.Add the chopped onions and garlic to the pan, and sauté until the onions are translucent.
3.Add the sliced mushrooms to the pan and sprinkle with salt and pepper. Cook until the mushrooms have released their juices and the pan is almost dry.
4.Transfer the mushroom mixture to a food processor and pulse until it is coarsely chopped.
5.Add mayonnaise, lemon juice, dill, salt, and pepper and pulse until everything is blended. Transfer to a bowl and chill in the refrigerator for at least 2 hours.
6.Serve with crackers or crostini.

PROS

This dish is a great alternative to traditional caviar for vegetarians and mushroom lovers.

Some people may not enjoy the texture of the coarsely chopped mushrooms.
