Ingredients

1 lb beef stew meat , cut into cubes ( chuck or round )
12 cups chicken stock ( and/or water ) or 12 cups beef stock ( and/or water )
6 large beets , tops removed
1 large onion , minced
4 tomatoes , peeled and seeded ( canned works fine )
1 -2 lime , juice of
2 tablespoons sugar ( I like less )
salt and pepper
to taste sour cream ( and/or snipped chives for garnish )

Instructions

1.In a large pot, bring the beef stew meat and chicken or beef stock/water to a boil, then reduce heat and simmer for 1-2 hours until the meat is tender
2.Meanwhile, grate the beets and add them to the pot along with the minced onion
3.Simmer for another hour until the beets are tender
4.Add the peeled and seeded tomatoes, lime juice, sugar, salt, and pepper to taste
5.Simmer for another 10-15 minutes
6.Serve with dollops of sour cream and/or snipped chives on top
