Instructions

1.Whisk egg yolks, black pepper, tarragon Dijon mustard, tarragon vinegar, and water together in a heatproof bowl

3.Whisk constantly until mixture thickens and doubles in volume
4.Remove bowl from heat and whisk for a few more seconds
