Days 4 and 5 :
7 1/2 cups bread flour
4 1/4 cups water
2 teaspoons malt powder

Instructions

1.Day 1: In a large bowl, mix 1 1/4 cups all-purpose flour, 1 1/2 cups water, 1/2 teaspoon malt powder, and 1/2 teaspoon honey until combined. Cover with a tea towel and let sit at room temperature for 24 hours.
2.Day 2: Add 1 1/4 cups flour and 1/2 cup water to the bowl and stir well to combine. Cover and let stand for another 24 hours.
3.Day 3: Repeat the same steps as Day 2 and let sit for another 24 hours.
4.Day 4: In a separate bowl, mix 7 1/2 cups bread flour, 4 1/4 cups water, and 2 teaspoons malt powder until combined. Add the mixture to the sourdough mixture and mix well. Cover and let stand for 12 hours.
5.Day 5: Knead the dough for 10-15 minutes, shape it into loaves, and place in bread pans. Cover the pans and let rise in a warm place for 2-3 hours.
