Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Cook and crumble sausage in a large skillet over medium-high heat until browned. Remove from skillet and set aside, reserving 1 tablespoon of drippings in the skillet.
3.Add bell pepper, onion, and garlic to the skillet and cook until tender.
4.Add olive oil, zucchini, and squash to the skillet and cook until lightly browned.
5.Stir in diced tomatoes, Italian seasoning, salt, and pepper. Add sausage back into the skillet and stir well.
6.Transfer the mixture to a 9x13 inch baking dish and top with shredded Cheddar cheese.
7.Bake uncovered for 25-30 minutes or until cheese is melted and bubbly.
