Ingredients

6 large sweet mild onions
1 1/2 cups cucumbers , peeled and finely chopped
3 cups tomatoes , finely chopped
6 hardboiled egg , chopped
1 1/2 cups mayonnaise
2 teaspoons cider vinegar
salt and pepper , to taste
1 teaspoon sugar , to taste
sour cream , for topping
Stuffed onions, or Farshovana Chebyalya, are a traditional dish in Azerbaijan and are typically served during special occasions and festivals. The combination of sweet, mild onion with a flavorful filling of cucumbers, tomatoes, and eggs makes for a delicious and comforting meal. Instructions

1.Preheat the oven to 375°F.
2.Cut off the top of the onion and peel the outer layer.
3.Using a spoon, scoop out the inside layers to create a hollow space.
4.In a bowl, mix together the chopped cucumbers, tomatoes, hardboiled eggs, mayonnaise, cider vinegar, salt, pepper, and sugar.
5.Stuff each onion with the mixture and place in a baking dish.
6.Cover the dish with foil and bake for 45 minutes.
7.Remove the foil, top each onion with a dollop of sour cream, and put back in the oven for an additional 10-15 minutes.
8.Serve hot and enjoy!
