Ingredients

3 tablespoons olive oil , divided
1 1/4 teaspoons kosher salt , divided
1/2 teaspoon ground black pepper , divided
7 cloves garlic , unpeeled
3 pounds small red potatoes , quartered
3 tablespoons minced chives
2 tablespoons white vinegar
2 teaspoons Dijon mustard

The dish features boiled new potatoes that are tossed in a simple yet flavorful roasted garlic vinaigrette. Instructions

1.Preheat the oven to 400 degrees Fahrenheit.
2.In a small bowl, mix 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
3.Toss the garlic cloves in the olive oil mixture and transfer them to a baking sheet.
4.Roast the garlic in the oven until it is soft and lightly browned, about 20 minutes.

7.Drain the potatoes and return them to the pot.

9.Squeeze the roasted garlic out of the cloves and mash it with a fork.
10.In a small bowl, whisk together the mashed garlic, chives, vinegar, and Dijon mustard.
11.Pour the roasted garlic vinaigrette over the potatoes and toss to coat evenly.
12.Serve the potatoes immediately as a warm side dish.
