Ingredients

1 lb dark rye bread , stale and cubed
3 quarts water
1/2 ounce active dry yeast
1/4 cup water , lukewarm
1 cup sugar
2 tablespoons raisins

Instructions

1.Preheat the oven to 300°F.
2.Spread the cubed rye bread on a baking sheet and toast for 20-30 minutes, until crisp.

4.Strain the bread mixture through a fine-mesh strainer, reserving the liquid. Allow the liquid to cool to room temperature.
5.In a small bowl, dissolve the yeast in the lukewarm water.
6.Add the sugar and raisins to the cooled liquid and stir to dissolve.
7.Stir in the yeast mixture. Cover the pot and let it sit in a warm place for 24-48 hours, until it has a slightly sour smell and taste.
8.Strain the kvass through a fine-mesh strainer to remove any solids. Store in the refrigerator and serve chilled.
