2 packages cream cheese , softened
1 container cottage cheese
1 container sour cream
1/4 cup butter , melted
1 cup white sugar
1/4 teaspoon lemon extract
1 teaspoon vanilla extract
1/2 cup finely chopped blanched almond
1/2 cup currants

Instructions

1.Line a pashka or cheese mold with cheesecloth.
2.In a large mixing bowl, combine the cream cheese, cottage cheese, and sour cream. Beat until smooth.
3.Mix in the melted butter, sugar, lemon extract, and vanilla extract. Stir until well combined.
4.Fold in the chopped almonds and currants.
5.Pour the mixture into the prepared mold, filling it to the top. Fold the cheesecloth over the top and chill in the refrigerator for at least 12 hours or overnight.
6.To serve, turn the pashka out onto a serving plate and remove the cheesecloth.
