5 slices home style bread , crust trimmed off
1/4 cup milk
2 lbs ground chicken breasts ( or 1 lb ground chicken & 1 lb lean finely ground veal )
8 tablespoons unsalted butter , softened
3/4 teaspoon salt
1/2 teaspoon white pepper
1 egg , beaten
2 cups fresh breadcrumbs , pulverized in a blender or shredded with a fork
10 tablespoons unsalted butter , cut into small pieces
Kotlety Pozharskie is a traditional Russian dish that features ground chicken, bread, and butter. The mixture is shaped into oval-shaped cutlets, coated in breadcrumbs, and pan-fried before being baked in the oven. The end result is a crispy exterior and a moist, flavorful interior. Instructions

1.Preheat the oven to 350F.
2.Soak the bread in milk, squeeze out excess.
3.In a large mixing bowl, combine the ground meat, softened butter, salt, white pepper, and soaked bread. Mix by hand until the ingredients are fully incorporated.
4.Form the mixture into oval-shaped cutlets and dip each side in beaten egg.
5.Coat each cutlet in the fresh breadcrumbs.
6.In a large skillet, melt the small pieces of unsalted butter over medium-high heat.
7.Sear the cutlets for about 2 minutes per side on the stovetop.
8.Transfer the skillet to the oven and bake for 10-15 minutes or until fully cooked through.
