Ingredients

1 teaspoon cumin seed , sub . 1/2 t ground
2 cinnamon sticks , 2 1-inch pieces , sub . 1/2 t ground
6 whole cloves , sub . 1 t ground
4 whole black peppercorns , sub . 1/4 t ground
1 teaspoon ground turmeric
2 teaspoons paprika
1/2 teaspoon cayenne ( to taste )
1 tablespoon ginger-garlic paste , recipe follows or 6 cloves of garlic and 1-inch piece fresh ginger , peeled
1/2 cup apple cider vinegar
3 tablespoons canola oil
1 medium red onion , sliced very thinly
1 serrano pepper , sliced in half with stem intact , sub , jalapeno but this is not as hot
2 lbs boneless beef top sirloin steaks , trimmed of all excess fat , cut into 1-inch cubes
1 teaspoon kosher salt , to taste
1/2 teaspoon fresh ground black pepper , to taste
This Goan Beef Curry With Vinegar, also known as Beef Vindaloo, is a popular Indian dish that is typically made with pork. However, this recipe uses succulent beef top sirloin steaks. The dish got its name from the Portuguese dish, Carne de Vinha d' Alhos. Over time, the dish was adapted to include local spices, Indian ingredients and flavors, ultimately evolving into the classic Indian dish we know and love today. Instructions

1.In a pan, dry roast cumin seeds, cinnamon sticks, cloves and peppercorns until fragrant.
2.Grind the roasted spices to a fine powder.
3.In a large mixing bowl, combine the spice powder, turmeric, paprika, cayenne, and ginger-garlic paste.
4.Add apple cider vinegar to the mixture and stir well.
5.In a pan, heat canola oil over medium heat. Add sliced onions and serrano pepper, stirring occasionally until lightly browned.
6.Add cubed beef, salt, and black pepper to the pan. Increase the heat to high, stirring frequently until the beef is browned on all sides.
7.Pour the spice mixture over the beef.
8.Add enough water to cover the beef and bring to a boil.
9.Reduce heat to low, cover and simmer for an hour or until the meat is tender.
10.Serve hot with basmati rice or naan bread.
