1 cup green lentil
cold water
225 g beef mince ( lean )
1 onion , diced
2 celery ribs , diced
1 carrot , diced
1 garlic clove , finely chopped
1 can chopped tomatoes
2 teaspoons vegemite ( or other yeast extract )
1 bay leaf
450 g potatoes , peeled and cut
450 g parsnips , peeled and cut
4 tablespoons plain low-fat yogurt
3 tablespoons chives , chopped
4 teaspoons parmesan cheese , freshly grated
This traditional beef and lentil pie is a classic dish that's hearty, warm, and perfect for a chilly evening. Instructions

2.In a large pot, cook beef mince over medium heat until browned. Add onion, celery, carrot, and garlic, and cook until vegetables are tender, about 5-7 minutes.
3.Add the can of chopped tomatoes, vegemite, cooked lentils, and bay leaf. Stir to combine, then reduce heat and let simmer for 20-25 minutes.
4.While the filling is cooking, preheat oven to 400°F. Boil potatoes and parsnips for 20 minutes or until tender. Drain, add plain yogurt, chives, and parmesan cheese. Mash together into creamy mixture.
5.Spoon filling into individual ramekins or a large baking dish. Top with mashed potato mixture. Bake in preheated oven for 20-25 minutes or until the potatoes are golden brown and the filling is hot and bubbling.
