Ingredients

3 lbs beef bones ( ask your butcher to cut them into manageable pieces )
1 1/2 lbs beef short ribs or 1 1/2 lbs beef brisket
16 cups water
1 large yellow onion , peeled and quartered
6 -8 cloves , whole
1 cinnamon stick
2 tablespoons salt
1/4 cup fish sauce
2 tablespoons sugar
thinly sliced raw sirloin beef , if desired ( optional )
1 lb rice noodles , uncooked ( Banh Pho , small size )

Pho Bo is a traditional Vietnamese beef noodle soup that is popular all over the world. The soup is typically made with beef bones, short ribs, or brisket, and flavored with aromatic spices like cinnamon and cloves, as well as fish sauce and sugar. Instructions

1.Preheat the oven to 450°F.
2.Put the beef bones and short ribs or brisket on a baking sheet and roast in the oven for 30 minutes or until nicely charred.
3.Meanwhile, bring 16 cups of water to a boil in a large pot.
4.Add the charred beef bones, short ribs or brisket, onion, cloves, cinnamon stick, salt, fish sauce, and sugar to the pot.
5.Reduce the heat to medium-low and let the soup simmer, covered, for at least 6 hours.
6.Remove the beef bones, short ribs or brisket, onion, and spices from the pot with a slotted spoon.
7.Cook the rice noodles according to the package instructions in a separate pot of boiling water.
8.Serve the soup with the cooked rice noodles and thinly sliced raw sirloin beef (if desired) on top.
