8 cups beef broth ( or chicken broth , we use Better Than Bullion paste )
2 beef bouillon cubes
1 can tomato sauce
1 can diced tomatoes
1 cup pearl barley
1 teaspoon dried parsley
1/2 teaspoon basil
1/4 teaspoon crushed red pepper flakes ( optional )
1 bay leaf
4 carrots , sliced
4 stalks celery , chopped
1 onion , chopped into large pieces
4 ounces fresh mushrooms , sliced ( optional )
salt and black pepper , to taste

Instructions

1.In a large pot, heat the olive oil over medium-high heat.
2.Add the beef (or chicken) and garlic, and cook until browned.
3.Add the beef broth (or chicken broth), beef bouillon cubes, tomato sauce, diced tomatoes, pearl barley, dried parsley, basil, crushed red pepper flakes (optional), and bay leaf.
4.Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
5.Add the carrots, celery, onion, and mushrooms (optional), and continue to simmer for an additional 45 minutes or until the vegetables are tender.
6.Season with salt and black pepper to taste.
7.Remove bay leaf before serving.
