1 large onion , diced
1 yellow bell pepper , diced
1 head cabbage , chopped
2 cans dark red kidney beans , drained and rinsed
3 cups frozen white corn
1 lb red potatoes , chopped
1 cup frozen peas
1 cup frozen green beans
1 cup carrot , diced
2 bay leaves
3 tablespoons hot sauce

Instructions

1.In a large pot, cook stewing beef until browned.
2.Add onions and bell pepper to the pot and cook until softened.
3.Add 6 cups of V8 juice, beef stock, cabbage, kidney beans, and bay leaves to the pot and bring to a boil.
4.Reduce heat and simmer for 1 hour or until vegetables are tender.
5.Add corn, potatoes, peas, green beans, hot sauce, and salt and pepper to taste, and continue simmering until vegetables are cooked to your liking.
