Ingredients

10 ounces rice noodles ( pho )
12 cups beef stock
4 ounces lean beef
2 cinnamon sticks
2 ounces fresh ginger ( no ginger powder for substitutition )
4 star anise
10 cloves
4 shallots , broiled until browned
1/4 cup fish sauce
2 tablespoons sugar
1 -2 teaspoon salt ( or to your taste )
1/4 yellow onion , sliced thinly ( to your taste )
1 cup cilantro , roughly cut ( to your taste )
1 cup bean sprouts
1 lime , cut into 4 wedges
1 red chili pepper , cut into thin slices
Beef pho bo, also known as Vietnamese beef noodle soup, is a hearty soup dish that originates from Vietnam. It is a common street food in Vietnam and a well-loved dish all over the world. Instructions

1.Soften rice noodles by soaking them in cold water for 30 minutes.
2.Preheat a pot on medium-high heat and add the beef stock.
3.While waiting for the beef stock to come to a boil, cook the beef until browned and set aside.
4.Add cinnamon sticks, fresh ginger, star anise, and cloves to the pot and let it simmer for 10 minutes.
5.In a small saucepan, broil the shallots until browned and set aside.
6.Add fish sauce, sugar, and salt to achieve a balance between salt, sweet, and sour flavors.
7.Assemble the soup by placing the softened rice noodles in a bowl, then add the browned beef, yellow onion, cilantro, bean sprouts, and broiled shallots, and then pour the hot beef stock over it all and add a squeeze of lime and sliced chili pepper on top.
