Ingredients

olive oil
3 beef steak fillets ( see note above )
2 red capsicums , quartered , seeds and membranes removed
1 large onion , sliced thinly
4 garlic cloves , crushed
2 red chilies , finely chopped ( I leave a few seeds in . )
50 ml balsamic vinegar
3 tablespoons brown sugar
2 corn cobs , trimmed and kernels removed
300 g red potatoes , halved and quartered , depending on size
100 g snow peas
150 g asparagus spears
2 tablespoons chopped fresh parsley

Instructions

1.Preheat the grill to high heat.
2.Brush both sides of the beef fillets with olive oil and season with salt and pepper.
3.Grill the fillets for 2-3 minutes on each side for medium-rare, or longer for desired doneness.
4.While the beef is cooking, heat a large skillet over medium-high heat.
5.Add a tablespoon of olive oil and the sliced onions and cook until softened, about 5 minutes.
6.Add the garlic, chilies, red capsicums, balsamic vinegar, and brown sugar to the skillet and cook for another 5 minutes, or until the capsicums are tender and the mixture has thickened.
7.Remove the beef from the grill and let it rest for a few minutes.
8.In a separate pot, boil the corn and potatoes for about 10 minutes or until tender, then drain.
9.In another pot, steam the snow peas and asparagus for about 3 minutes or until tender.
10.Serve the beef fillets with the capsicum relish, corn, potatoes, snow peas, and asparagus on the side. Garnish with chopped fresh parsley.
