Ingredients

2 -4 lbs beef ( Ribeye or London Broil are very tender and tasty )
1 -2 tablespoon oil
3 -8 garlic cloves ( crushed or minced , I use a lot ! )
1 large onion , chopped
4 tablespoons chili powder ( or to taste )
3 teaspoons cayenne pepper ( or to taste )
3 teaspoons chili pepper flakes ( or to taste )
3 tablespoons cumin
2 teaspoons paprika
2 tablespoons white pepper ( or to taste )
3 tablespoons dried cilantro
4 tablespoons dried parsley
1 can tomatoes , chopped
2 cans green chilies , roasted
1 can chili beans
1 can kidney beans , drained and rinsed
1 can pinto beans , drained
1 can black beans , drained and rinsed

Instructions

1.Preheat a large dutch oven over medium heat with oil.
2.Cut beef into bite-sized pieces and transfer into the dutch oven. Cook until all sides are browned.

4.Stir in chili powder, cayenne pepper, chili pepper flakes, cumin, and paprika, and white pepper.
5.Add chopped tomatoes, green chilies, chili beans, kidney beans, pinto beans, black beans, cilantro, and parsley to the mixture.
6.Cover and let the chili simmer for 2-3 hours, stirring occasionally.
