Ingredients

3 lbs beef , eye of round or 3 lbs boneless bottom round roast , all fat trimmed
5 garlic cloves
1/2 medium onion
1/2 lime , juice
2 -4 chipotle chiles in adobo ( to taste )
1 tablespoon cumin
1 tablespoon oregano , dried
1/2 teaspoon clove
salt and pepper
3 bay leaves
1 teaspoon oil
1 cup water

Instructions

1.Add all the ingredients (except the beef and oil) into a blender and blend until smooth.
2.Trim the beef of all visible fat and cut it into 6 large pieces.
3.In a large skillet, heat 1 teaspoon of oil over medium-high heat. Once hot, sear the beef on all sides for about 2-3 minutes per side until browned.
4.Add the beef and the blended sauce to the slow cooker.
5.Set the slow cooker to cook on low for 6-8 hours, or on high for 4-5 hours.
6.Once done, remove the beef and shred it using two forks. Discard the bay leaves from the sauce and skim off the fat.
7.Add the shredded beef back to the slow cooker along with the sauce. Mix well and let it cook for another 10-15 minutes. Serve hot with your favorite sides.
