3/4 teaspoon salt
1/4 teaspoon pepper
10 ounces mushrooms , quartered
1 large red onion , cut into 1-inch-thick wedges
1 tablespoon olive oil

Instructions

1.Preheat oven to 450°F
2.Using a small knife, make 3 small incisions in the top of the roast and insert garlic cloves into each.
3.Rub the steak seasoning, 1/2 tsp salt, and pepper onto the beef and set aside.
4.In a baking pan, toss mushrooms and onions with olive oil and 1/4 tsp salt.
5.Place the beef on top of the vegetables.
6.Roast for 20 minutes, then reduce the oven temperature to 325°F.
7.Continue roasting until an instant-read thermometer inserted into the center of the roast registers 120°F for medium-rare, about 1 1/2 hours.
8.Remove roast from oven and cover with aluminum foil, let it rest for 15 minutes.
9.Slice the roast and serve with the vegetables.
