Beef stroganoff is a classic Russian dish, typically made with beef, mushrooms, and sour cream sauce, and served over pasta or rice. This recipe puts a twist on the classic by turning it into a casserole, perfect for a cozy dinner on a chilly evening. With a base of lean ground beef, mushrooms, and onions, it is then smothered in a creamy sauce made with sour cream, chicken broth, and Dijon mustard. Topped with golden brown cheese, this dish is equally delicious fresh from the oven or reheated for leftovers.

Instructions

1.Preheat the oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
2.In a large skillet, cook the ground beef over medium-high heat until browned. Drain any excess fat.
3.Add salt, pepper, and oil to taste, followed by mushrooms, onions, and garlic. Sauté for a few minutes until the vegetables are tender and aromatic.
4.Stir in the chicken broth or bouillon, cream of mushroom soup, sour cream, and Dijon mustard. Simmer until everything is well combined and heated through.
5.Add the cooked egg noodles to the skillet and stir until they are coated in the sauce.
6.Transfer the mixture to the prepared baking dish and bake for 25-30 minutes, or until the casserole is hot and bubbly and the top is golden brown.
