Ingredients

2 1/2 lbs eye of round roast , boneless and tied
2 teaspoons kosher salt
1 teaspoon olive oil
1 tablespoon olive oil
1 teaspoon ground black pepper
2 teaspoons dried oregano
2 teaspoons dried basil
1 1/2 teaspoons crushed red pepper flakes ( cut back to 1 teaspoon if sensitive to heat )
3 garlic cloves , finely minced to a paste

The preparation process of this recipe is rather simple and the roast is an amazing accompaniment with sides dishes such as green vegetables or potatoes or it can be used for sandwiches. Instructions

1.Preheat oven to 450°F.
2.Rub the roast with 1 teaspoon of olive oil.
3.In a bowl, mix together salt, black pepper, basil, oregano, red pepper flakes and garlic to make a paste.
4.Spread the paste over the entirety of the roast.
5.Place the roast in a roasting pan with the fat side up.
6.Roast in the oven for 15 minutes.
7.Lower the oven temperature to 325°F and continue roasting for approximately 1 hour or until the internal temperature reaches your desired doneness. (For medium-rare, remove it from the oven when the internal temperature is 135°F)
8.Let the roast rest for 10-15 minutes before untieing and carving.
