Ingredients

4 tablespoons olive oil
1 garlic clove
2 large onions , thinly sliced
1/3 cup flour
salt and pepper , to taste
2 1/2 lbs lean stewing beef , cut into 1 1/2 inch cubes
2 lbs baby red potatoes ( about 1 1/2 inches diameter )
1/2 teaspoon dried dill weed
1 cup Burgundy wine
1 can beef consomme
4 tablespoons olive oil ( or a combination of both ) or 4 tablespoons butter ( or a combination of both )
18 fresh button mushrooms , halved ( or quartered , depending on size )
granulated garlic , to taste
salt and pepper , to taste
1 package frozen artichoke hearts , thawed and quartered

Instructions

1.Preheat the oven to 350 degrees Fahrenheit.
2.In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add garlic clove and let it sizzle for a few seconds.
3.Add sliced onions and sauté for 5 minutes until they are translucent.
4.In a bowl, combine flour, salt, and pepper. Toss cubed beef in the flour mixture until each cube is coated. Add beef to the pot and sauté for 5 minutes until browned on all sides.
5.Add baby red potatoes, dried dill weed, Burgundy wine, and beef consomme to the pot. Stir everything together.
6.Cover the pot with a lid and place in the oven. Bake for 2 hours.
7.In a large skillet, heat 2 tablespoons of olive oil (or butter) over medium-high heat. Add mushrooms and sauté for 5 minutes until they are softened and golden. Season with granulated garlic, salt, and pepper.
8.Add the mushrooms and frozen artichoke hearts to the pot. Stir everything together and continue to bake for another 30 minutes.
9.Remove from oven and let it stand for 10 minutes before serving. Enjoy!
