Ingredients

3 lbs stewing beef , cut into 1-inch cubes
salt and pepper , to taste
water or broth
12 medium potatoes , peeled and thinly sliced
3 tablespoons butter
2 tablespoons parsley , minced
1 onion , peeled and minced
3 eggs
2 1/2 cups flour , sifted
2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons shortening or 4 tablespoons butter
7 -8 tablespoons cold water
3 tablespoons butter or 3 tablespoons bacon drippings
1 cup dry bread , diced
1/2 cup milk

Instructions

1.Season beef cubes with salt and pepper, then place them in a large pot and cover with water or broth. Cook on low heat for 2-3 hours or until beef is tender.
2.In a separate large pot, place thinly sliced potatoes and cover them with water. Boil for around 10 minutes until the potatoes are tender. Drain and add 3 tablespoons of butter and minced parsley to the potatoes. Stir together.
3.Prepare the dumpling dough by whisking eggs and 7-8 tablespoons of cold water together. Add flour, baking powder, and 1/2 teaspoon of salt. Knead the dough until stiff.
4.Heat 4 tablespoons of shortening or butter in a frying pan. When the fat is hot, add minced onion and diced bread. Fry until golden brown.
5.Roll the dumpling dough to about ½ inch thickness and cut into small circles. Drop the circles into boiling water and cook for 10 minutes.
6.When the beef is done, remove it from the pot and set aside. Drain the broth and save for another use, like soup.
7.In a separate frying pan, melt 3 tablespoons of butter or bacon drippings. Cut the beef cubes into smaller pieces and fry them in the pan until they are crispy.
8.Serve beef and dumplings on a plate with the potatoes on the side and enjoy!
