1 lb ground beef or 1 lb ground turkey
1 teaspoon salt
1 teaspoon pepper
1 chipotle chile in adobo , diced
6 cups water , if possible bottled or filtered
2 tablespoons Worcestershire sauce
1 tablespoon beef base
3 ounces tomato paste
1 teaspoon dried oregano
1 fresh bay leaf
1/2 cup barley

Instructions

1.In a large pot, heat olive oil over medium heat.

3.Add minced garlic, diced chipotle chile, diced funghi porcini, diced shiitake mushrooms and cubed beef to the pot and cook until the meat is browned and the veggies are tender.
4.Stir in tomato paste, beef base, dried oregano, fresh bay leaf, Worcestershire sauce, salt and pepper to combine.
5.Add water and bring the mixture to a boil.
6.Reduce heat to low and add barley to the soup.
7.Cover the pot and simmer for about 45 minutes until the barley is tender and the soup is thickened to your preference.
