Ingredients

3 lbs stewing beef
3 tablespoons ghee or 3 tablespoons oil
2 large onions , finely chopped
1 tablespoon finely chopped fresh ginger
3 -4 garlic cloves , finely chopped
4 tablespoons ceylon curry powder
1 teaspoon ground turmeric
2 teaspoons black mustard seeds
2 teaspoons salt
1 tablespoon vinegar
2 fresh chilies , seeded and chopped
3 ripe tomatoes , peeled and chopped
Harak Mas Curry, also known as Sri Lankan Beef Curry, is a popular dish in Sri Lanka that is usually served with rice. Instructions

1.In a large pot, heat the ghee or oil over medium-high heat.

4.Add the beef and stir well to coat with the spices. Sauté until the beef is browned on all sides.
5.Add the chopped chilies and tomatoes and stir well.
6.Reduce the heat to low, cover the pot, and let the curry simmer for 2-3 hours, stirring occasionally, until the beef is tender and the sauce has thickened.
