Ingredients

3 1/2 cups fresh corn kernels ( from 4 ears of corn )
2 tablespoons buttermilk
3/4 teaspoon salt
1/2 cup butter , softened
2 tablespoons sugar
1 egg
1 cup masa corn flour ( harina de maiz )
1/2 teaspoon baking powder
1 cup monterey jack cheese ( grated )
2 ounces bacon ( about 3 slices )
3 scallions , chopped
1 tomatoes , chopped
1 teaspoon cumin
1 -2 teaspoon garlic salt
1 lb ground beef
1 can black beans
4 ounces cream cheese , softened
4 tablespoons ranch dressing
1/4 cup salsa

Instructions

1.In a mixing bowl, combine the corn kernels, buttermilk and 1/4 tsp salt and mix well.
2.In another bowl, beat the butter and sugar with an electric mixer until light and fluffy. Add in the egg and beat until well combined.
3.In a third bowl, mix together the masa corn flour, baking powder and 1/2 tsp salt. Gradually add this to the butter mixture, beating until just combined.
4.In a pan, add the bacon and cook until crispy. Remove from heat, and add in the scallions, tomatoes, cumin and garlic salt. Mix to combine. Add the ground beef to the pan and cook until browned. Add the black beans and cook for a further 5-7 minutes.
5.To assemble, spread approximately 1/4 cup of the masa dough onto the center of a piece of Reynolds Wrap Foil (Non-Stick). Spread the mixture out into a rectangle shape. Add approximately 2 tbsp of the beef and bean filling to the center of the dough. Add 1 tbsp of grated Monterey jack cheese and 1 tbsp of softened cream cheese.
6.Roll up the foil, making sure the fillings are tightly packed inside. Secure the ends. Repeat with the remaining ingredients.
7.Place the tamales seam side down in a large steaming pot with enough water to come up to the steamer basket. Cover the pot and steam the tamales until cooked, approximately 30 minutes.
