Ingredients

1 cup chopped smoked bacon
4 eggs
1 head romaine lettuce , chopped
2 cloves garlic , finely chopped
2 cups curly endive , chopped
2 roma tomatoes , sliced
1 cup olive oil
1/2 cup red wine vinegar
2 tablespoons Dijon mustard
1 teaspoon white sugar
2 tablespoons herbes de Provence
salt and pepper to taste
1 small onion , finely chopped
Salade Lyonnaise is named after the French city of Lyon, where it originates from. It's a classic French salad, traditionally made with frisée lettuce, lardons (cubes of bacon), and a poached egg on top. In this version, we're swapping in romaine lettuce and curly endive, but keeping the smoky bacon and boiled eggs. The salad is then dressed with a tangy garlic mustard vinaigrette, which balances out the richness of the bacon and eggs. This salad is perfect for a light lunch or dinner, and can be easily customized to your preferences.

Instructions

1.Fry the bacon over medium heat until crispy. Remove from pan and set aside.
2.Fill a small pot with water and bring to a boil. Carefully add the eggs and boil for 6 minutes.
3.Remove the eggs and place in a bowl of ice water for 2 minutes. Peel and set aside.
4.In a small bowl, whisk together the garlic, red wine vinegar, Dijon mustard, sugar, herbes de Provence, salt, and pepper.
5.In a large bowl, combine the romaine lettuce, curly endive, tomatoes, onions, and bacon. Toss in the dressing until evenly coated.
6.Serve the salad onto plates and top each with a peeled egg, cut in half.
