Onion-Braised Beef Brisket(ATK) is a classic comfort food dish that is perfect for colder weather or special occasions. The brisket is slowly cooked in a flavorful sauce made with onions, garlic, and herbs until it becomes melt-in-your-mouth tender. The savory sauce complements the richness of the beef and adds a depth of flavor that will make everyone at the table want seconds. This dish is perfect for family dinners or special occasions when you want to make something hearty and warming.

Instructions

1.Adjust oven rack to middle position; heat oven to 300 degrees F. Pat brisket dry with paper towels and season generously with salt and pepper.
2.Heat oil in large Dutch oven over medium-high heat until shimmering but not smoking. Brown brisket well on all sides, reducing heat if fat begins to smoke, 8 to 10 minutes. Transfer brisket to large plate.
3.Reduce heat to medium, add onions, sugar, and 1/2 teaspoon salt to pot and cook, scraping bottom of pot frequently, until onions are softened and golden brown, 12 to 15 minutes. Stir in garlic, tomato paste, paprika, and cayenne and cook until fragrant, about 30 seconds. Stir in flour and cook for 1 minute.
4.Slowly whisk in broth and wine until smooth, increase heat to high, and bring to simmer. Add bay leaves, thyme, and brisket along with any accumulated juices to pot, cover, and transfer to oven. Cook for 3 - 3.5 hours or until fork-tender.
5.Remove brisket from Dutch oven and let rest for at least 20 minutes. Remove bay leaves and thyme from sauce and let rest for 5 minutes. Using a large spoon, skim excess fat from surface of sauce and discard. Stir in cider vinegar. Season sauce with salt and pepper to taste. Slice brisket against grain and serve with sauce.
