1 ounce lemongrass ( chopped small )
1/2 teaspoon tomato paste
1 teaspoon chili oil
1 lb beef ( sliced thin )
1/2 English cucumber ( chopped )
1/2 cabbage ( chopped )
1/2 lb bean sprouts
rice noodles
green onion ( chopped for garnish )
Spicy beef satay pho is a Vietnamese noodle soup that is rich and flavorful. The combination of savory beef, tangy satay and crunchy peanuts gives it a truly unique taste. Instructions

1.In a medium pot, heat the chicken broth over medium heat until it comes to a boil.
2.Add hoisin sauce, satay barbecue sauce, crushed peanuts, chopped lemongrass, tomato paste and chili oil to the pot.
3.Let the mixture simmer for 10 minutes.
4.Add the sliced beef to the pot and let it cook for about 5 minutes until it changes color.
5.Meanwhile, prepare the rice noodles as per package instructions.
6.Once each of the ingredients is cooked, add the chopped cucumber, cabbage, and bean sprouts to the pot.
7.Let the mixture simmer for another 5 minutes.
8.To serve, divide the cooked noodles among serving bowls and ladle the beef soup over the top.
9.Garnish with chopped green onions and serve hot.
