Ingredients

4 cups unpeeled shredded zucchini
1/2 teaspoon salt
2 eggs
1/2 cup grated parmesan cheese
1 cup shredded cheddar cheese , divided ( or to taste )
2 cups mozzarella cheese , divided ( or to taste )
1 lb ground beef
1 -2 tablespoon minced fresh garlic
salt and pepper
1 onion , chopped
1 can Italian-style tomato sauce ( tomato sauce , with 1/4 tsp . each , oregano and basil )
1 medium green pepper , seeded and chopped
This easy zucchini and ground beef pizza casserole is a low carb twist on a classic dish. The casserole is layered with shredded zucchini, ground beef, and topped with melted cheeses. Instructions

1.Preheat the oven to 375°F (190°C).
2.Place shredded zucchini in a colander over the sink or a large bowl.
3.Sprinkle with 1/2 teaspoon of salt and mix well. Let the zucchini sit for 10 minutes, then squeeze out the excess moisture.
4.In a mixing bowl, whisk together eggs, parmesan cheese, 1/2 cup of cheddar cheese, and 1 cup of mozzarella cheese.
5.Add the zucchini to the bowl and stir well.
6.In a skillet, cook ground beef until browned.
7.Add garlic, onion, and chopped green pepper to the skillet and sauté until the vegetables are tender.
8.Pour in the tomato sauce, and stir to combine with the beef and vegetables.
9.Spread half of the zucchini mixture in an 8x8 inch (or 9x9 inch) casserole dish.
10.Spread the beef mixture over the zucchini layer.
11.Add the remaining zucchini mixture on top of the beef layer.
12.Sprinkle remaining cheddar and mozzarella cheese on top of the casserole.
13.Bake for 30 to 40 minutes or until brown and bubbly on top. Let the casserole cool for a few minutes before serving.
