Ingredients

1 1/4 lbs sirloin steaks , tips ( trimmed of excess fat and cut lengthwise with grain into 4 equal pieces )
2 teaspoons soy sauce
1 lb white mushroom , quartered
2 teaspoons hot water
1 tablespoon dry mustard
1 teaspoon sugar
fresh ground black pepper
1 tablespoon vegetable oil
1 medium onion , finely chopped
table salt
2 teaspoons tomato paste
4 teaspoons unbleached all-purpose flour
1/3 cup plus 1 tbsp . white wine or 1/3 cup dry vermouth
1 1/2 cups beef broth
1/2 cup sour cream
1 tablespoon chopped fresh parsley leaves
Beef Stroganoff is a classic dish that has been enjoyed for generations. Instructions

1.Pat steak dry with paper towels and sprinkle with soy sauce. Combine mushrooms, hot water, mustard, sugar, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1 tablespoon oil in bowl.
2.Heat 12-inch skillet over medium-high heat. Add steak and cook without moving until well browned, about 2 minutes. Flip steak and cook until browned on second side, about 1 minute. Transfer to cutting board and cut across grain into 1/4-inch-thick slices.
3.Heat 1 tablespoon oil in now-empty skillet over medium-high heat. Add onion and 1/4 teaspoon salt and cook until softened, about 2 minutes. Stir in tomato paste and cook until fragrant, about 30 seconds. Stir in flour and cook for 1 minute. Whisk in wine and broth, scraping up any browned bits, and bring to boil.
4.Reduce heat to medium and add mushroom mixture and beef with any accumulated juices. Simmer, stirring occasionally, until sauce is thickened and mushrooms are tender, about 10 minutes.
5.Off heat, whisk in sour cream and parsley. Adjust seasoning with salt and pepper to taste.
