Crock Pot Chicken (Or Beef or Pork) Green Chile Stew is a flavorful and hearty meal that is perfect for chilly days or when you need a comforting meal that will fill you up. The dish is a variation of the traditional New Mexican green chile stew, which is typically made with pork or beef, roasted green chiles, and potatoes. In this version, we are using chicken instead of pork or beef, and we are adding tomatillos and poblanos to give it some extra flavor and texture. The dish is relatively easy to make, and it can be customized to your liking by adjusting the heat level or adding more veggies or spices.

.In a slow cooker, combine the chicken (or beef or pork) with cumin, sage, onions, garlic, and cider vinegar. Stir well to coat the meat with the spices.
.Add the potatoes, poblanos, tomatillos, chicken broth, and cilantro. Mix well.
.Cover and cook on low for 6-8 hours, or until the meat is tender and cooked through.
.Serve hot, with a side of rice or tortilla chips, and enjoy!
