1/3 cup raisins , chopped
1/4 cup chopped pimento stuffed olive
1 1/2 tablespoons red wine vinegar
1 tablespoon all-purpose flour
1 3/4 teaspoons ground allspice
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 cup packed , grated monterey jack cheese ( , , about 4 ounces )
1/3 cup chopped fresh cilantro
2 packages refrigerated buttermilk biscuits
2 egg yolks , beaten to blend ( glaze )

Instructions

1.Preheat oven to 400 degrees Fahrenheit.

8.Scoop a tablespoon of the beef mixture onto one half of each circle.
9.Fold the other half of the biscuit over the filling and press the edges together with a fork.
10.Place the empandadas on a baking sheet and brush the tops with the beaten egg yolks.
11.Bake for about 16-18 minutes or until golden brown and crispy.
