Ingredients

5 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon cumin
2 cloves garlic , minced
3 1/2 cups water
2 cans no-added-salt tomato paste
1 dash Tabasco sauce
12 flour tortillas
1 lb ground beef
1 medium onion , chopped
2 cups cheddar cheese or 2 cups monterey jack cheese , shredded
1/2 cup black olives , sliced
Beef (or Chicken or Turkey) Enchiladas are a classic Mexican comfort food that have become popular all over the world. Instructions

1.Preheat oven to 375°F.
2.In a medium saucepan, combine chili powder, salt, cumin, garlic, water, tomato paste, and Tabasco sauce. Stir well, then set aside.
3.In a large skillet, cook ground beef and onion until beef is browned and onion is tender. Drain off excess fat.
4.Wrap tortillas in foil and warm in oven for about 5 minutes.
5.Grease a large baking dish. Spread 1/3 of the sauce in the bottom of the dish. Dip each tortilla in the sauce and fill with beef mixture and shredded cheese. Roll up and place seam-side down in baking dish.
6.Pour remaining sauce over the enchiladas. Top with sliced black olives.
7.Cover baking dish with foil and bake for 30-35 minutes or until hot and bubbly.
