2 cups milk
7 1/2 tablespoons all-purpose flour

3/4 cup castor sugar or superfine sugar

Instructions

1.Preheat the oven to 400°F.
2.To make the vanilla custard, place the milk, flour, vanilla bean, sugar, salt, and egg yolks in a medium saucepan.
3.Whisk constantly over medium heat until the mixture thickens and comes to a boil, about 10-12 minutes.
4.Remove from heat and continue to whisk for another minute.
5.Strain the custard through a fine-mesh sieve into a bowl.

7.Chill in the refrigerator for at least 3 hours or overnight.
8.Roll out the puff pastry on a lightly floured surface to about 1/8-inch thick.
9.Cut the pastry into 6 rectangles, then prick them all over with a fork.
10.Place the dough rectangles on a baking sheet and bake until golden brown, about 15 minutes.
11.Remove from the oven and cool on a wire rack.
12.To assemble, sandwich a layer of custard between two puff pastry rectangles, then brush the top with apricot preserves and dust with confectioners’ sugar.
13.Repeat with the remaining pastry and custard.
14.Serve chilled.
