Ingredients

5 lbs short rib of beef
1 tablespoon chili powder
1 tablespoon ground coriander
1 tablespoon ground cumin
1 large onion , roughly chopped
2 large carrots , peeled , roughly chopped
6 garlic cloves
3 slices ginger
4 whole Thai chiles
2 cups dry red wine
1 cup sweet soy sauce ( kechap manis )
1/2 cup dark soy sauce
3 sprigs fresh thyme
1 -2 quart water , to cover
1/2 cup chopped scallion
1/2 cup cilantro
salt and black pepper
canola oil , to cook

Instructions

1.In a bowl, mix chili powder, ground coriander, and ground cumin together.
2.Season short rib of beef with the spice mixture, salt and black pepper.
3.On high heat, heat up the canola oil in a pan. Sear the beef evenly until brown.
4.In a large pot, soften the onions, garlic, ginger, and carrots in the oil. Add in the Thai chiles afterward.
5.Pour in the soy sauces and red wine into the pot.
6.Add the beef and fill the pot up with water to cover the contents. Bring them to a boil.
7.Reduce heat to low, add thyme sprigs, and let simmer for up to 3 hours.
8.As the beef becomes tender, sprinkle chopped scallion and cilantro over it to serve.
