Ingredients

8 beef tenderloin , filets - 3 oz.each
4 egg yolks , large
4 teaspoons water
2 teaspoons fresh lemon juice
1/8 teaspoon hot pepper sauce
8 ounces butter , unsalted , melted and separated
salt ( to season )
fresh ground black pepper ( to season )
1/2 teaspoon shallot , minced
1 teaspoon jalapeno pepper , finely diced
2 ounces white wine
1 teaspoon cilantro , chopped
1 teaspoon fresh parsley , chopped
2/3 cup paprika
1/4 cup chili powder
1 1/2 teaspoons ground cumin
1/4 teaspoon cayenne pepper
2 teaspoons granulated garlic
1 1/2 teaspoons thyme leaves , dry
1 1/2 teaspoons oregano leaves , dry
2 teaspoons salt
2/3 teaspoon black pepper

Instructions

1.Season the beef tenderloin evenly with paprika, chili powder, ground cumin, cayenne pepper, granulated garlic, thyme, oregano, salt and black pepper.

3.Grill each side of the tenderloin for 4-5 minutes per side, until it reaches an internal temperature of 135°F for medium-rare or up to 150°F for medium to medium-well.
4.While the beef is cooking, start making the Jalapeno Hollandaise Sauce. In a double boiler, whisk together egg yolks, water, fresh lemon juice, and hot pepper sauce.
5.Whisk the mixture constantly while adding melted unsalted butter slowly. Whisk until all butter is added, and the sauce is thickened.
6.Add finely chopped jalapeno and white wine and continue whisking, adding a pinch of salt and pepper.
7.Once the beef is cooked to your desired doneness, transfer it to a plate, sprinkle with minced shallot and let it rest for 2-3 minutes.
8.Then, drizzle the Jalapeno Hollandaise Sauce over the beef tenderloin and sprinkle with cilantro and parsley.
