Ingredients

2 tablespoons olive oil
1 1/2 cups onions , finely chopped
1 teaspoon salt , plus a pinch
1/2 cup red bell pepper , finely chopped

1/2 cup milk
2 large eggs , beaten
1 lb andouille sausage ( or other smoked sausage , cut into 1-inch chunks and coarsely chopped in a food processor )
1 lb ground beef
1 lb ground turkey
1/2 teaspoon dried sage
1 teaspoon dried thyme
1 teaspoon fresh ground black pepper
6 tablespoons Dijon mustard
3 tablespoons light brown sugar
1 tablespoon cider vinegar

Instructions

1.Preheat the oven to 350°F.

4.Add the Worcestershire sauce and remove the skillet from heat.

9.In a small bowl, mix the Dijon mustard, light brown sugar, and cider vinegar until well combined. Spread the mixture over the top of the meatloaf.
10.Bake for 1 hour or until the internal temperature reaches 160°F.
11.Let it stand for 10 minutes before slicing and serving.
