Who-Dat Stew (Burgundy Beef) with Cornmeal-Thyme Dumplings is a hearty meal that has its roots in the American South. A family favorite, it’s a warm and comforting dish that’s perfect for chilly days. The beef stew is rich and flavorful with tender chunks of beef, potatoes, carrots, onions, and mushrooms. The cornmeal-thyme dumplings are light and fluffy with a delicate texture and add an extra layer of flavor to the stew. This recipe is great for feeding a crowd or for meal prep, as it can be made ahead of time and reheated for later.

Instructions

1.Heat olive oil in a Dutch oven over medium-high heat. Add round steak and cook until browned, stirring occasionally (around 6 minutes).
2.Add minced garlic, cook for 1 minute, then add beef broth, red wine, tomato paste, and 2 teaspoons thyme. Bring mixture to a boil and then reduce heat to low and cover it partially with a lid.
3.Simmer for 1 hour until the beef is tender.
4.Add the potatoes, carrots, onion, mushrooms, salt, and pepper. Stir, cover, and continue to cook until all the vegetables are tender (approximately 20 minutes).
5.Make the cornmeal-thyme dumplings by mixing cornmeal, bread flour, baking powder, salt, and thyme in a medium bowl. Add melted butter and milk, stir until the mixture is smooth.
6.Drop dumpling batter with a scoop or spoon on top of the stew, cover it with a lid, and cook until dumplings are cooked through (approximately 12-15 minutes).
7.Dish out and serve hot.
