Ingredients

6 small Granny Smith apples
3 table spoons brown sugar
6 eggs
1 cup caster sugar
1 cup self raising flour
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon white vinegar
icing sugar , to serve
double cream , to serve
Russian apple cake, also known as 'Sharlotka', is a popular dessert in Russia. This cake is lighter than most traditional sponge cakes, due to the use of eggs as a raising agent. It is also healthier than most desserts, as it uses fresh, fiber-rich apples and less sugar than usual recipes. Sharlotka is a classic comfort food that is perfect for any time of day, paired with a hot cup of tea or coffee.

Instructions

1.Preheat your oven to 180C/160C Fan/Gas Mark 4 and grease a 20cm cake tin
2.Peel and slice the apples into thin slices. In a bowl, mix the apples with brown sugar and set aside in a bowl
3.Beat the eggs in a large mixing bowl until pale and fluffy
4.Gradually mix caster sugar, self raising flour, vanilla extract, baking soda and white vinegar into the bowl with the beaten eggs, until well combined
5.Add the apples to the mixture and gently fold in
6.Pour the mixture into the cake tin and bake in the preheated oven for 45 - 50 minutes, or until a skewer inserted into the cake comes out clean
7.Leave to cool before dusting with icing sugar and serving with double cream
