2 beef short ribs , meaty ( cut or not )
1/2 cup pearl barley
3 garlic cloves , minced
2 onions , chopped
3 big leeks , cut lengthwise ( use both white and green parts )
2 cups chopped mushrooms ( optional )
8 cups filtered water or 8 cups beef stock

Instructions

1.Preheat the oven to 375°F (190°C).

4.Remove the beef from the pot and set aside.
5.Add the garlic, onions, and leeks to the pot and sauté them over medium heat for 5 minutes.

7.Return the beef to the pot along with any juices that may have accumulated and add the barley and water (or beef stock).
8.Bring the mixture to a boil, then reduce the heat to a simmer and cook for 2-3 hours or until the beef is fall-off-the-bone tender.
9.If desired, remove the bones from the beef and shred the meat.
10.Ladle the soup into bowls and enjoy!
