Ingredients

4 bell peppers , halved and seeded , any color
1 lb ground beef
ground black pepper , to taste
cayenne pepper , to taste
onion powder , to taste
chili powder , to taste
paprika , to taste
dried sage , to taste
2 1/2 cups yellow rice ( I used an 8oz box of Goya brand )
1 can diced tomatoes
2 cups shredded cheddar cheese

Instructions

1.Preheat oven to 375 degrees Fahrenheit.
2.In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
3.Season beef with ground black pepper, cayenne pepper, onion powder, chili powder, paprika, and dried sage, to taste.
4.Add diced tomatoes and yellow rice to the skillet. Stir to combine all ingredients.
5.Cover the skillet and let the rice cook for about 20 minutes or until fully cooked.
6.Stuff each bell pepper half with the beef and rice mixture.
7.Pour ¼ cup of water into the bottom of a baking dish. Place the stuffed bell peppers in the dish.
8.Bake for 35-40 minutes or until the bell peppers are tender and the stuffing is heated through.
9.Sprinkle shredded cheddar cheese over the stuffed peppers and continue baking for 5 minutes or until cheese is melted and bubbly.
