1/4 cup fresh lime juice

1 tablespoon chipotle chile in adobo , chopped

2 ears fresh corn , husked
4 plum tomatoes , seeded , chopped
1 cup jicama , chopped , peeled ( optional )
1/2 cup red onion , chopped

1 tablespoon chili powder

2 lbs beef tenderloin
1 avocado , halved , peeled , pitted , diced
10 cups mixed baby greens
2 small mangoes , peeled , pitted , thinly sliced
This Grilled Beef Salad with Corn Salsa and Chipotle Dressing is a Mexican-inspired dish that is colorful and full of flavor. Instructions

1.In a blender, combine 1/4 cup lime juice, 1/4 cup cilantro, 1 tablespoon chipotle chile in adobo, 2 pressed garlic cloves, and 1 cup olive oil. Blend until smooth.
2.Set grill to medium-high heat. Grill 2 husked ears of corn for 15 minutes, rotating every 5 minutes, until charred. Cut off kernels.
3.In a large bowl, combine the charred corn kernels, 4 chopped seeded plum tomatoes, 1 cup chopped jicama (optional), 1/2 cup chopped red onion, 1/4 cup chopped cilantro, 1 1/2 tablespoons lime juice, 1 tablespoon ground cumin, 1 tablespoon chili powder, and 3 pressed garlic cloves. Toss until well mixed.
4.Season 2 lbs beef tenderloin with salt and pepper. Grill for 10-15 minutes for medium-rare, or until well cooked. Let rest for 5-10 minutes before slicing.
5.In a large bowl, combine 10 cups mixed baby greens and sliced beef tenderloin. Top with corn salsa and diced avocado. Drizzle with chipotle dressing.
