Ingredients

1 tablespoon chopped fresh oregano

This Italian Style Beef and Pepperoni Soup is a delicious and nutritious meal option that is perfect for cold winter nights. Instructions

1.In a large pot, cook the ground beef over medium heat until browned.

5.In the same pot, add the mushrooms, green bell pepper, green onion, and garlic. Cook for a few minutes until the vegetables have softened.
6.Add the olive oil, tomato paste, crushed tomatoes, chicken broth, fresh basil, fresh oregano, and fresh ground pepper. Stir to combine everything.
7.Bring the soup to a boil and then reduce the heat to low. Let the soup simmer for 15 minutes.
8.Add the cooked beef and pepperoni to the soup and simmer for another 5-10 minutes until everything is heated through.
9.Ladle the soup into bowls and top with fresh basil and shredded parmesan cheese.
