Ingredients

600 g filet of beef
1 sheet pastry dough
2 tablespoons English mustard
3 large mushrooms
100 g thinly sliced parma ham
salt and pepper
1 egg
Beef Wellington Ramsay Style is a British classic that has been around since the 19th century. This dish was named after Arthur Wellesley, the Duke of Wellington, who defeated Napoleon Bonaparte in 1815. The dish was created to celebrate the Duke's victory and has remained popular ever since. This version by Chef Gordon Ramsay has become a showstopper at any dinner party or special event. The dish is made by searing a filet of beef, smearing it with mustard, then coating it in a mushroom duxelle and wrapping it in Parma ham. It is then wrapped in puff pastry dough and baked until golden brown.

Instructions

1.Preheat the oven to 200°C (400°F).
2.Sear the filet of beef for 1 minute on each side in a hot pan with olive oil.
3.Remove the beef from the pan and brush with English mustard.
4.Finely chop the mushrooms in a food processor.
5.Heat a pan, add olive oil and mushrooms. Cook until all the moisture has evaporated, and season with salt and pepper.
6.Add the thinly sliced Parma ham on top of the prosciutto, slightly overlapping the pieces. Spread the mushroom duxelle over the ham. Lay the seared beef fillet on top of the ham and roll it up tightly using the clingfilm to help. Chill in the fridge for at least 15 minutes.
7.Roll out the puff pastry dough on a lightly floured surface. Remove the clingfilm from the beef Wellington and lay it in the center of the pastry.
8.Brush the edges of the pastry with beaten egg yolk, then fold the pastry around the beef and press the edges together to seal the Wellington. Brush the top of the pastry with beaten egg yolk.
9.Score the pastry lightly with a knife in a criss-cross pattern taking care not to cut into the pastry completely. Bake for 20 minutes until the pastry is golden brown, then lower the oven temperature to 180°C (350°F) and cook for another 15 minutes.
10.Rest for 10 minutes before slicing.
